TODAY'S TRIO OF CHEESE:  ***Cayuga Blue***   (Lively Run Goat Dairy, NY)  * Goat, Raw * Aged for 2 months.  A mixed milk bleu inspired by the classic French Roquefort.  ***Noblette***  (Calkins Creamery, Honesdale, PA)  * Cow, Pasteurized * Soft, fresh pastured baby brie. Petite and dainty, like an elegant and more interesting cousin of brie. Notes of herbs and mushrooms with a buttery finish. ***Washington Crossing Cheese***  (Ely Farms, Newtown, PA) * Cow, Raw * Made in the style of gouda with the addition of Italian cultures. Sort of a gouda/parm hybrid. Aged for a minimum 60 days. Served with house-made jams, Green Meadow Farm raw honey & seasonal fruit, our house-made pickles & pickled mustard seed.
