***Noblette*** (Calkins Creamery, Honesdale, PA)

Soft, fresh pastured baby brie. Petite and dainty, like an elegant and more
interesting cousin of brie. Notes of herbs and mushrooms with a buttery finish.
***Springdell*** (The Farm at Doe Run, Unionville, PA)
*Cow/Goat, Pasteurized*
A seasonal Gouda/Alpine hybrid made with a mix of cow and goat’s milk. Creamy
texture with caramel and nutty flavors. The aging process makes it crystalline
and dense with tons of flavor. Great for beer pairing with an IPA, porter, or
pale ale.
Served with house-made jams, Green Meadow Farm raw honey & seasonal fruit, our
house-made pickles & pickled mustard seed.
